This healthy refresh on our regular Friday night pizza made my life easy. Distracted by melty cheese and pepperoni, my kids didn’t object to the extra veggies.
While I love the Pioneer Woman to the point of mild obsession, I often find her 16 minute meals to be 13 minutes more prep than I can handle.
On this blog, I’ll be sharing healthy meals that 1. take less than 5 minutes to make and 2. were eaten by all 4 of my young, opinionated taste testers.
These pepper pizzas were a winner. My 3 year old’s advice: “You gotta eat it like a taco!”
Ingredients (simplified from original delish.com recipe):
4 bell peppers, halved and cored
1 tablespoon extra virgin olive oil
1/2 cup pizza sauce
2 cups shredded mozzarella cheese
1/3 cup mini pepperoni
Preheat oven to 350.
On a sheet pan, drizzle peppers with olive oil. Add pizza sauce to the inside of each pepper half. Top with mozzarella and pepperoni. Bake for 10-15 minutes.
